Preheat oven to 350F. Thaw puff pastry per package instructions.
In a mixing bowl, combine walnut flour, almond flour, melted ghee, cinnamon powder, and coconut sugar.
Lay out one sheet of puff pastry, horizontally, and spread half of nut mixture in a thin layer covering the entire sheet.
Roll tightly from the longer side of the rectangle. Using a sharp knife, cut off half an inch off of each end. Then slice into 8 equal rolls.
Repeat with the second puff pastry sheet.
Place all 16 rolls on a lightly greased casserole tray or a baking sheet. Bake for 15-20 minutes until rolls appear golden brown. Baking time may vary depending on the baking tray used.
In the mean time, combine honey, water, lemon juice, lemon zest, and clove powder in a small bowl.
Allow rolls to cool completely, then top each roll with 1/2 to 1 tbsp of the syrup, can add more if needed. Enjoy!
